The representation of Chinese in anime are basically like blacks in American film, so yes.
Here's a list of things you may or may not have seen before:
1. Wears obviously Chinese clothing
2. Knows kung-fu/some obscure branch of Chinese martial arts
3. Ends sentences with "de aru"
4. Has a fascination with meat buns
5. Eyes more slitted than even the Japanese
6. Portrayed as either student or unsavoury immigrant (sometimes, both)
Chinese females in anime usually fall under one or more of these stereotypes, more often than Chinese males do. Hei is the first, and probably the last Chinese person portrayed in an anime in a positive manner (Wei Zhijun and Alice, ironically, are by the book stereotypes) that I expect to see in the next decade or so.
Anime and manga that take place in a fantasy setting are no exception--a notable example of this myopic stereotype is Fullmetal Alchemist: Brotherhood, with Xing as the most blatant China analogue I've ever seen. -
