asked by BrendoffI think any two crafting professions will give a decent benefit for PVE. Engineering/Enchanting would be fairly fun.

It really depends on the stats on the individual weapons, and what else you have available to you at the time. I often end up with a dagger+shield, and I always prefer to go for 1h+shield where possible. With the changes to intellect in Cataclysm, shields will become even better for us.
That said if you're running around with a crappy shield and mace, and a great epic staff drops for you and is an upgrade, there is no reason not to roll on it (unless you have better waiting in the bank.)
Lore-wise I quite like the mace and shield combo, and am intrigued by the craftable spellpower fist weapons in Cataclysm!
TL:DR: which ever has the biggest combo of the stats you need is best for you.
