The two colors are white (#fff) and dark gray (#444). White is suitable for dark backgrounds and toolbars, and the dark gray looks great on white backgrounds and in table rows particularly, alongside text elements. iOS automatically applies those blue and gray colors to icons in a UITabBar.

The best way is to load one of the PNGs into Photoshop, choose Edit > Fill and ensure the "Preserve transparency" checkbox is ticked.

Glyphish icons are carefully constructed for both UITabBar elements and as decorations in table rows. The 1x size is around 30x30 pixels, perhaps averaging 26 or 28 pixels. The 2x sizes are exactly double the 1x counterpart, to support the iPhone 4's Retina display perfectly.
So, every icon has a 1x and 2x version.
File formats included:

The latest version of Glyphish Pro is not a free upgrade. I think you'll find $25 for 100+ new icons is still a great deal – less $0.25 per icon! And remember, your support enables the creation of more icons in the future.
The latest edition contains 140 total new icons (100 classic and 40 mini) and the entire set of 400 is now in two sizes *and* two colors – that's like getting 800 icons! -
Keeping the font updated with new icons turned out to be problematic, so the font is on vacation until further notice. It might return in the future someday.

Include a note on your app's website, plus a link back to the Glyphish website. Most people write something like "Icons by Glyphish" and link that. You could also write something like "Great iPhone icons from Glyphish". Anything along those lines is OK as long as it's clear and includes a link.
