Just signed up, & from reading about it, I plan to rebind the sketchbook with my own paper, so could get started working now... So do I need to keep approx the same thickness? How thick? How many pages are in the sketchbook originally?

The thickness isn't an issue at all. The only thing to really worry about is the dimensions of the height and width. Make sure the book stays exactly at 8.25x5.25. There are 80 pages in the sketchbook.
