Because every song has its own needs and possibilities. If you want this kind of video you will have to find a songwriter who has found one way he likes to do things and stuck with that.
If I did make a video like this my advice would be something along the lines of TRY EVERYTHING. Every song uses some or all of the following things - and this is only a partial list - try working with them in different orders; all of them can be start points:
- lyrics
- melody
- selection of instruments
- chord
- chord progression
- beat
- rhyme
- story
- title
- first line
- last line
- texture
- sound effect
- mood
I hope this helps. Songwriting is a very personal thing and different approaches will work better for different people. Ultimately you find out what works for you by spending a lot of time trying a lot of things. -

Thanks for a really good question that has made me think about everything I've done in the past few years, and where I'm headed now...
